Just in Time for the Fall Season: Calabacitas Con Queso

Calabacitas con queso is one of those wonderful dishes that instantly transport me back to my childhood. My grandma used to make this as a meal for me after I would get home from school. The wonderful taste of the vegetables and the gooey cheese are like heaven. Hope you try it and share your experience in the comments section.

  1. heat the vegetable oil (medium-high heat) in a large pan for 30-45 seconds
  2. add tomato and onion and cook for 1 minute
  3. add calabacitas, cilantro, corn (optional) and salt - stir to combine all vegetables
  4. cover for 20-25 minutes - calabacitas should release some liquid and be soft
  5. add shredded cheese and stir to integrate the cheese - turn off the heat and let it sit for 2 minutes to let the cheese melt.
  6. Serve and enjoy!
